Are You Ready for Halloween?

Costumes are done. Check. Decorations are up. Check. Candy is bought. Check. Bought more candy, cuz you already ate it. Check.
If you already gained weight, here’s a couple of tips for next year: 1) Wait to buy the candy the day before Halloween. Those little Halloween treats are small, but the calories add up after the third or fourth chocolate. 2) Make a rule. Allow yourself one piece a day and stay strong.
Pumpkin is the new orange. Right? It’s everywhere and is very healthy. It’s loaded with vitamin A to repair body tissues and help with night vision. Americans are coming up short for many nutrients including vitamin A, so look for ways to get more vitamin A into your diet.
I’ve never been a big fan of pumpkin pie, so I wanted to find a way to enjoy pumpkin. Literally, I started dumping together ingredients and came up with these delicious, moist pumpkin muffins. I was totally surprised at how great they turned out. Try them yourself.

Dump and Go Delicious Pumpkin Walnut Muffins – Makes 12 muffins
2 cups flour
½ cup sugar
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon cloves
1 cup canned pumpkin
2 large eggs
½ cup applesauce
¼ cup canola oil
½ cup water
½ cup chopped walnuts
¼ cup raisins
Preheat oven to 350 degrees. Spray a muffin pan with non-stick cooking spray. Stir together the flour, sugar, baking soda, baking powder, salt, cinnamon, ginger, cloves, walnuts, raisins. In another bowl, mix the pumpkin, eggs, applesauce, oil, water. Add the pumpkin mixture to the flour mixture and quickly stir until mixed. Don’t over mix, or you will have pumpkin rocks. Bake for 20 minutes or until a toothpick comes out clean. After a few minutes, take the muffins out of the pan.

Did You Say Wink Martindale?

Wink Martindale at the Book Publicists of Southern CA
It was an honor to meet legendary broadcaster, Wink Martindale, when he hosted the Book Publicists of Southern California's 20th Annual IRWIN Awards Banquet.

As a 17-year-old deejay in Memphis, Wink met Elvis Presley and the two became longtime friends. After moving to Los Angeles, Wink appeared on the Ed Sullivan show for recording Deck of Cards.

Over the years, he hosted 21 game shows, including TicTac-Dough, Gambit, High Rollers, and Trivial Pursuit.

But did you know that Wink's favorite food is sauteed spinach? Good for you Wink. Very healthy and loaded with potassium. His favorite activity is tennis.

When you are in LA, check out his Star on the Hollywood Walk of Fame. Find him on Tweeter @WinkMartindale or check out his book, "Winking at Life."

The One and Only Adrienne Barbeau

Ruth Frechman and Adrienne Barbeau

Adrienne Barbeau has literally done it all. Stage. Television. Film. Voice-Over. Radio Host. Best-selling Author. She sings. She dances. Is there anything that she doesn't do?
I could have listened to Adrienne for hours, as she talked about her life and her love of writing at a recent Independent Writers of Southern California meeting (IWOSC). She started her career on Broadway with “Fiddler on the Roof.” Besides being on the TV series “Maude,” Adrienne starred in “The Fog,” “Escape from New York,” and “Swamp Thing” to name a few. Recently, she was on “Argo.” Besides her best-selling memoir “There Are Worse Things I Could Do, she also wrote “Vampyres of Hollywood,” and “Love Bites.” Stay tuned for the release of her third book.
But did you know?? Adrienne’s favorite food is grapefruit juice? She could live on it and drinks four cups a day! Health choice! It’s loaded with vitamin C and potassium. She loves to walk miles and miles down city streets. When she’s on location for a film, she likes working out on the machines and weights at the hotel gym. Great way to stay fit and healthy!
It was a pleasure to meet such a beautiful, talented, and gracious multi-talented star.

Nothing's Better than Freshly Baked Bread

Since I like quick and easy, I was intrigued when I saw fellow registered dietitian nutritionist, Maggie Green's recipe for "dump and stir" bread. You can get more of Maggie's recipes in her cookbook, The Kentucky Fresh Cookbook from her website: http://greenapron.com

Please enjoy guest blogger Maggie Green's recipe for Beer Batter Bread. Try it. Let me know what you think:

“Dump and stir” savory breads make a quick addition to any meal. When made with a dark, rich stout, or in honor of Oktoberfest, a hearty German beer, this bread pairs well with fall fare such as soups, stews, or roasted meats and vegetables.

Beer Batter Bread

Makes one 9 x 5 x 3-inch loaf
4 tablespoons (1/2 stick) unsalted butter, melted, plus more for the loaf pan
3 cups unbleached all-purpose flour
1 tablespoon baking powder
3 tablespoons sugar
1 teaspoon salt
One 12-ounce bottle stout or German beer at room temperature
Preheat the oven to 375°F. Brush one 9 x 5 x 3-inch loaf pan with some of the butter. In a bowl, combine the flour, baking powder, sugar, and salt. Add the beer and 2 tablespoons of the remaining melted butter, stirring just until combined. (The batter will be somewhat lumpy.) Pour the batter into the prepared loaf pan and drizzle with the remaining 2 tablespoons of melted butter. Bake for about 35 to 40 minutes or until a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes. Then turn out onto a wire rack to cool. Serve warm or at room temperature.
